主持人:大家好!欢迎来到重庆——中国面积最大、也最年轻的直辖市。这里是朝天门码头,嘉陵江和长江在此相拥,孕育出重庆的母城——渝中区。古老和崭新在这里交织,碰撞出了一种独特的生活智慧,重庆人口中的“巴适”,意思是舒服平静、一切都很好。走吧,咱们今天就在渝中品一品“巴适”究竟是什么滋味。

Host: Hello, friends! Welcome to Chongqing, China's largest and youngest municipality. Right here is Chaotianmen Wharf, where the Jialing River meets the Yangtze River, forming the historic heart of the city: Yuzhong District. Here, the ancient and the modern intertwine, shaping a unique way of life that locals sum up in one word: "bashi." It means comfort, ease, and a sense that everything is just right. So come along. Today, we'll head into Yuzhong to get a true taste of what bashi is all about.

主持人:渝中半岛三面环水、一面依山、地形复杂。3000年来,经历四次大规模筑城。大约在600年前的明朝形成了“九开八闭”的17座城门。通远门是唯一一座只通陆路的城门,厚重的城墙讲述着当年的峥嵘岁月。而今天,这里是我体验巴适重庆的开端。

Host: Surrounded by water on three sides and backed by mountains on the fourth, the Yuzhong Peninsula features dramatic, intricately layered terrain. Over the past 3,000 years, the city has gone through four major phases of fortification. Around 600 years ago, the Ming dynasty (1368-1644) fortified the city with a system of 17 gates, creating the famous layout of "nine open gates and eight closed ones." Tongyuan Gate is the only one that doesn't face a river. These thick stone walls seem to echo with stories of past battles and turbulent times. Today, it's the beginning of my journey of bashi.

Host: Is this a bookstore?

主持人:可以啊。

Host: Sounds good.

何霞:好,那这边请。尝尝我们重庆的盖碗茶。一杯茶一本书,巴适。早起一杯盖碗茶醒神,午后再来一杯盖碗茶,也是我们的一种消遣方式,很休闲。

He Xia: Alright, this way please. Try our Chongqing covered-bowl tea. A cup of tea and a good book. Bashi. A cup of covered-bowl tea perks you up in the morning. Another in the afternoon is how we like to unwind. Very relaxing.

主持人:书香润心、茶香留客,而故事不囿于方寸,转身之间便从茶香余韵步入街巷鲜活的呼吸里。在山城哪能不爬坡?这条街名叫十八梯,因为这里曾经有一口古井,井前恰恰有十八步阶梯。它的历史和“八百年重庆府”一样长。这里曾经是连接重庆上半城和下半城的重要通道,但它远不仅是一条街,它承载着老重庆人的记忆。随着时间的推移,这里逐渐变成了一个充满烟火气的传统风貌区。

Host: Books refresh, tea lingers. But stories unfold beyond these walls. One step takes us from the warmth of tea into the vibrant pulse of ancient streets. In a mountain city like Chongqing, climbing is simply part of daily life. This is Shibati, or "18 Steps," named after an ancient well that once stood here, reached by exactly 18 stone staircases. Dating back 800 years, this street was once the vital artery connecting the city's upper and lower halves. But it is more than just a thoroughfare. For generations of locals, these steps carry the weight of collective memory. Over time, it became a neighborhood full of everyday life and local flavor.

主持人:你好,老板!

Host: Hello, there!

徐强(在渝里火锅店负责人):你好,欢迎!

Xu Qiang (Owner, Zaiyuli Chongqing Hotpot): Hello, welcome!

主持人:你这个店好多年了吧?

Host: This place has been around for years, right?

徐强:对,其实大概有30多年了。因为我很小的时候,我们家爷爷这辈当时就已经住在十八梯了。反正那个时候,十八梯是重庆的一个老的社区。改造之后我们就说,要不我们再回来把那个火锅店继续做下去。

Xu Qiang: Yeah, over 30 years now. When I was a kid, my grandparents were already living in Shibati. Back then, it was an old neighborhood in Chongqing. After the area was renovated, we figured: why not come back and keep the hotpot restaurant going?

主持人:老故事。

Host: An old story.

徐强:老故事啊。走,我们去看。

Xu Qiang: An old story indeed. Come on, let's take a look.

主持人:既然我大老远来到了重庆,必须要吃一顿著名的重庆火锅。太辣了!

Host: Since I came all the way to Chongqing, you know, I just have to try the famous Chongqing hotpot. So spicy!

徐强:辣就对了!

Xu Qiang: That's how it should be.

主持人:好的,好的。

Host: Okay, okay.

徐强:其实,重庆火锅对我们重庆人来讲,几乎是每个月都会吃的一种食物。夏天重庆40多度的天气,我们也会来吃。然后冬天吃火锅就是那种驱寒取暖,又让身体特别舒服。用我们重庆话讲就是巴适。

Xu Qiang: Actually, Chongqing hotpot, for us locals, is something we eat almost every month. Even in summer when it's over 40 degrees Celsius, we still have it. And in winter, hotpot warms you up and makes you feel really cozy. In Chongqing dialect, we call it bashi.

主持人:为什么是九宫格?

Host: So, why is it a nine-grid pot?

徐强:我们重庆火锅几乎都是九宫格。因为那个时候大家生活困难嘛,没钱,所以一个桌子可能会坐两三拨人来吃。那么就划格子。这三格是我的,这三格是你的,这样来分。

Xu Qiang: Almost all Chongqing hotpots use one. Back in the day, people didn't have much money, so a table might have two or three groups eating together. They'd divide the pot with grids. These three are mine, and those three are yours. That's how it started.

主持人:这样分?

Host: Like this?

徐强:对对对。所以传到后来,说到九宫格就是重庆火锅的一个代表。吃我们重庆火锅,必吃的一个菜就是毛肚。

Xu Qiang: Exactly, exactly. Over time, the nine-grid pot became a symbol of Chongqing hotpot. A must-try with Chongqing hotpot is tripe.

主持人:为什么是毛肚?

Host:Why tripe?

徐强:火锅的发源是在重庆朝天门的一个地方。毛肚是牛的胃,所以有些人不会吃,就把那个东西丢了。然后那些码头工人因为生活困难,就给它捡起来,然后自己煮火锅这样来吃。慢慢地,它就成了我们重庆火锅的一道必点菜。

Xu Qiang: Hotpot originated near Chaotianmen in Chongqing. Tripe is ox stomach, so some people wouldn't eat it and would throw it away. Dockworkers back then were poor, so they'd pick it up and cook it in the hotpot. Gradually, it became a must-have dish in Chongqing hotpot.

主持人:吃饱喝足,也该让眼睛和耳朵过过瘾了。哇哦!太精彩了!是时候学两手了

Host: Whew, now that we're all well and truly fed, it's time to feast our eyes and our ears. Wow! That was mesmerizing! Now, I think it's time to go learn a bit of this magic.

主持人:哇,就像魔法一样。听说变脸只有川剧有。

Host: Whoa, it's like magic! I heard face-changing is unique to Sichuan Opera.

蔡文灿(川剧变脸演员):变脸是我们川渝地区的非物质文化遗产。变脸来源于湖广填四川,移民在路上产生的,因为它最开始的用途就是驱赶野兽、吓老虎这些东西。现在的话也是我们川渝地区的一个明信片了。

Cai Wencan (Sichuan Opera Face-Changing Performer): Face-changing is an intangible cultural heritage of the Sichuan-Chongqing region. It originated from the migration to the region from Hunan and Hubei provinces. At first, people used it to scare off wild animals, like tigers and such. Now, it's become a calling card of our region.

主持人:那你能教教我吗?

Host: So, can you teach me?

蔡文灿:可以啊。不过台上一分钟台下十年功,我先教你一点基础的吧。

Cai Wencan: Sure! But as they say, "One minute on stage takes 10 years of practice." Let me start with the basics.

主持人:啊!不好意思。

Host: Oh! Sorry.

蔡文灿:先开扇,然后这边夹住,然后再抡回来,然后再过去。

Cai Wencan: First, open the fan. Then hold it here. Now turn it back, and swing it over.

主持人:差不多。太难了。我还得再练几个小时或几年。对不起。

Host: That's about right. Too hard. I'm gonna need a couple more hours or years. Sorry.

主持人:除了著名的变脸,在渝中我还找到了另一项有千年历史的非物质文化遗产。这是什么?

Host: Besides the famous face-changing, I also discovered another millennia-old intangible cultural heritage right here in Yuzhong. What's this?

王晖(重庆市工艺美术大师):这是蜀绣,四大名绣之一,有三千年的历史了,主要分布在川渝两地。

Wang Hui (Chongqing Arts and Crafts Master): This is Shu embroidery, one of China's four famous embroidery traditions. It has a history of over 3,000 years and is mainly practiced in Sichuan and Chongqing.

主持人:哇,我喜欢这个图案。我可以试试吗?

Host: Wow, I like this design. Can I give it a try?

王晖:可以。这样下去

Wang Hui: Sure! Go downward like this.

主持人:你确定吗?

Host: Are you sure?

王晖:没错的。

Wang Hui: Okay, okay.

王晖:没事没事。蜀绣千变万化的针法的应用才能够让精美的图案得以完美的呈现。这份艺术才能够传承千年。现在你看啊,你用到这个针是世界上最细最细的针,然后这个针孔也是世界上最小的针孔。2025年夏天库里来重庆的时候,他就亲自体验了一下(纫针),就是穿过去了。

Wang Hui: It's alright. No worries. Shu embroidery uses intricate, ever-changing needlework techniques that bring beautiful designs to life. That's how this art form has endured for thousands of years. Now, look, the needle you're using is one of the finest in the world, and the eye of the needle is also one of the tiniest. When Stephen Curry visited Chongqing in the summer of 2025, he tried threading one himself and succeeded.

主持人:第一次?

Host: On the first try?

王晖:嗯对,你要不也试一下?

Wang Hui: Yes. Why don't you give it a try?

主持人:行啊。挑战接受!不,差一点点。

Host: Alright. Challenge accepted. No. So close!

王晖:太棒了!

Wang Hui: Very good!

主持人:成功了!不过大概试了五次吧。难怪人们说库里是神射手。
